Carrot (Gajar) Halwa/Pudding
A very healthy Indian dessert, further improved recipe which takes it to all new level as this is Sugar Free, Fat Free, Dairy Free - and that's what I call Wholesome Awesome Recipe! An excellent dessert for entire family for winter season, or you can make it anytime as long as you an get fresh carrots from local market - preferably organic produce.

Instructions
  1. Wash, peel and grate the carrots
  2. Add the grated carrots to a deep pan/'khadai'
  3. Add the almond milk to pan and mix it well
  4. Let it cook for 20-30 minutes on medium flame and stir it occasionally to ensure the carrots are mixed well with the reducing milk. Cook until the mix is near dry.
  5. Add the jaggery powder and mix it well, and cook it for another 10 minutes until mix is dry
  6. Add Raisins, Cardamom Powder, and Cashews and give it a good mix
  7. Carrot Halwa is ready, serve it hot and enjoy!
