An excellent dessert for entire family for winter season, or you can make it anytime as long as you an get fresh carrots from local market - preferably organic produce.
Let it cook for 20-30 minutes on medium flame and stir it occasionally to ensure the carrots are mixed well with the reducing milk.
Cook until the mix is near dry.
Add the jaggery powder and mix it well, and cook it for another 10 minutes until mix is dry
Add Raisins, Cardamom Powder, and Cashews and give it a good mix
